🍲 🇭🇺 Eiko's Sertéspörkölt (Pork Stew)
The beef version called "marhapörkölt" matches more closely to the description of "goulash" outside Hungary, as "gulyás" is usually a soup ("gulyásleves"), not a stew, in Hungary.
Ingredients
❖ 2 table spoons oil or lard (I use Mangalica lard)
❖ 200 g onion (after peeling), chopped
❖ 500 g pork, chopped
❖ (optional) bell pepper
❖ (optional) tomato
❖ 1.5 table spoons paprika powder
❖ 1 tea spoon ground cumin
❖ 1 tea spoon salt
❖ (optional) sour cream or sour cream + soft / weak flour
Preparation
1️⃣ Heat oil or lard in a pot or wok and cook onion until transparent.
2️⃣ Add pork and cook well. Many Hungarians add bell pepper and tomato, but I’m too lazy.
3️⃣ Add paprika powder, cumin, and salt. Many Hungarians add paprika while cooking onion.
4️⃣ When the liquid is reduced, add 200 cc of water.
5️⃣ Once it’s back to boiling, cover with a lid, turn down the heat, and cook for 30 minutes. Take away the lid and cook a bit more if you wish.
